Banana Loaf

The Banana Loaf is a perfect treat for weekend breakfast …or enjoy any day for a mid-morning pick-me-up.

 125 g PURE SPREAD
 4 MEDIUM BANANAS
 4 tbsp HONEY, PLUS EXTRA TO GLAZE
 1 tbsp LEMON JUICE OR THE JUICE OF HALF A LEMON
 125 g CASTER SUGAR
 250 g GLUTEN FREE FLOUR
 1 tsp BAKING POWDER
 2 MEDIUM EGGS/EGG REPLACER
 50 g 50G SULTANAS
 3 BROWN SUGAR CUBES, ROUGHLY CRUSHED

Preheat oven to 180°C/Gas mark 4. Line a 1½L loaf tin with greaseproof paper.

Peel the bananas and break them into a bowl with the honey and the lemon juice.

Mash together with a potato masher until they are very soft. Add the Pure spread and mash it in (don’t worry if the mixture looks lumpy)

Next add the sieved flour, baking powder, caster sugar, eggs and sultanas.

Using the wooden spoon beat everything together then spoon into the tin and level with the potato masher.

Bake for 1 hour and 15 minutes until the cake is a golden colour. Leave to cool for 10 minutes then turn out onto a wire rack.
